Indian Chickpea Soup
It’s mid week and wanted to try and be slightly adventurous for once, given that Aria doesn’t go to bed that early and the sound of a blender might wake her was thinking I would give it a miss and then I thought why not just go for it!! So I did!!
1 tbsp cooking oil
2 garlic cloves crushed
1 tsp grated ginger
1 tbsp of garam masala
1 carrot roughly chopped
A handfull of broad beans (optional – I had them in the fridge!)
1 400g can of chickpeas
850 ml Chicken or Vegetable stock.
150 g greens beans
Heat the oil and add the roughly chopped onion and cook for a few minutes, then a the garlic and ginger, and then the garam masala. Stir to coat the onions with the spices, add the carrots, broad beans and the can chickpeas and then the stock bring to the boil and simmer for 25 minutes. While soup is simmering cook the green beans till tender, I cooked the beans in the soup for the last 8 minutes, to save on pans! Either fish out the green beans or just put the cooked soup in the blender and whizz till smooth. Pour into a bowl and then add the green beans and finish with a splash of extra virgin olive oil.
