So am trying to expand the weekly recipes and now soup season is here, thought I would give this one a go!
We had it last night for dinner and it was yummy, the fresh pesto worked a treat and made it taste extra special.
1 tbsp Olive oil
1 large onion chopped
1 garlic clove
1 small courgette slice half lengthways
227g tin of tomatoes
150g tin of cannellini beans
1 pint of vegetable stock
200g Cappelletti pasta
1 tbsp of fresh pesto on each bowl
Heat the olive oil and add the chopped onion, fry until soft, add the garlic then add the tin of tomatoes, stock and the beans. Bring to the boil and simmer for five minutes.
Taste and season, add the courgette and cook for 1 minute and the add the capelletti pasta and cook for a further three or four minutes.
Ladle into bowls and top with the fresh pesto!
